Easter Week
quick note today.....I will include a recipe for these "No bake energy balls" from my friend, Jill Kroll; they are yummy and may provide an alternative to lots of sweets and candy in the Easter Baskets this week. I shared them with my fellow instructors at the Caldwell YMCA during a meeting last Friday and they all seemed to enjoy them.
We finished classes last week at Lewis and Clark Elementary school and just wanted to thank my friend, Angela Layne, once again.... for organizing these classes. We had a lot of fun and the atmosphere seemed so much more relaxed then some of the regular classes I teach.... it was very enjoyable!
Here is the recipe you might like!
No Bake Energy Balls: - 1 cup old fashioned oats
-1/2 cup wheat germ, (I use ½ cup of oat bran)
- 2/3 cup toasted coconut,
- 1/2 creamy peanut butter, (I use crunchy!)
-1/2 cup honey
- 1 Tablespoon of chia seeds (optional) - dark chocolate chips (little mini ones work best) **I substitute chopped nuts for the chocolate chips
- splash of real vanilla
**Mix all ingredients, roll into balls and refrigerate*** – EAT!
